Bellini - Original with white peach
SERVES 4
• 1 fresh White Peach
• Juice of 1/4 Lemon
• 1 tablespoon Orange Juice
• 480ml / 16 fl.oz Prosecco
Put the peach in a bowl and cover it with boiling water. Leave for 1-2 minutes, remove and run under cold water. Run a sharp knife down the sides in 4 or 5 places trying not to pierce the flesh much. Gently peel off skin with your hands, cut flesh and remove stone. Chop flesh and place in a food processor/blender with orange and lemon juices. Blend until smooth. Divide the mixture among 4 x chilled champagne glasses to 1/4 full, then top with Prosecco.
